Celler del Roure have become the pioneer of quality wine in Valencia. Owner Pablo Calatayud is committed to nurturing and championing the indigenous varieties of the region, most notably the Mando and Verdil grapes, both of which have been on the edge of extinction.

Les Prunes is a white wine produced from the red skinned Mandó grape from the same vineyards as used in Safra which is harvested early to enitice the fresh and delicate Mediterranean style flavours. Soft pressing and cold fermentation of the free run juice with indigenous yeast. This is fermented as you would with a white wine, direct pressing without maceration and no skin contact. Fermentation in stainless steel tanks and finished in old clay underground amphoras for 6 months.
