Grapes are hand harvested from vineyards that are farmed organically. The Reinhessen is one of Germany's arid regions (annual rainfall of just 500mm) The region is protected by the Palatinate mountains, protecting it from humid winds and storms. The grapes undergo a cold maceration of 12 hours. Fermentation in stainless steel tank is spontaneous with ambient yeasts.
