100% hand-picking of the grapes followed by meticulous selection at the winery. The Malvasia grapes undergo whole bunch pressing to extract only the finest aromas then wild yeastfermented in stainless steel tank, and the Agiorgitiko is 100% whole bunch fermented and carbonicmacerated as a red wine vinification again in stainless steel tank. The base wine is then blended, withthe second fermentation taking place in the bottle (traditional Champagne method) and the winematuring for over 9 months on its fine lees in order to gain complexity and character beforedisgorgement.A broad spectrum of primary and secondary aromas starting with red fruits, orange peel, and persimmon, and evolving into notes of brioche, lavender and violets. 
Crisp yet smooth and pleasantly full on the palate, with a red fruit persistent aftertaste.
Great as an aperitif or with salads, shellfish or light Asian dishes.
