Green apple, gooseberry and lemon on the nose. Light and refreshing on the palete.
Hand picked grapes. Destemming, crushing, pressing and settling the juice by gravity. Spontaneous start of the alcoholic fermentation. When the process is stable adding the base wine from 2021 vintage. Bottling at the final stage on the fermentaiton. 3 months on the lees. Disgorgment at the beginning of February 2023.
Vinification of the base wine - orange style, spontaneous alcoholic fermentation about 30-35 days of skin contact, no temperature control. The base wine afterwards is aged for 12 months in 400 barrels - French oak and acacia. No SO2 addition only topping.
