A smooth and vibrant sparkling wine with a fine, constant mousse and clean, refreshing aromas of white peach and citrus notes layered with delicate biscuity nuances.
The grapes were very lightly whole bunch pressed without destemming. The must was then clarified by cool, static sedimentation. Fermentation took place with selected yeasts in temperature controlled stainless steel tanks. The secondary fermentation took place in the bottle as per the Traditional Method, followed by 18 months bottle ageing.
