The grapes are hand-harvested with careful selection both in the vineyard and again at the winery. Around 80% are destemmed and fermented in concrete vats, with gentle extraction techniques — including pumping over and rack-and-return over 27 days — to retain purity and finesse in the fruit. Fermentation temperatures are closely controlled to preserve aromatic detail. The remaining 20% undergoes carbonic maceration, bringing a lifted, juicy, and more vibrant fruit character to the blend.
Bouquet des Garrigues 2024 displays a bright ruby colour with lively highlights. The nose is layered and expressive, combining ripe wild strawberry and blueberry with notes of orange peel and a hint of Sichuan pepper. Subtle touches of vanilla and liquorice add warmth, while herbal tones of thyme and gentian reflect the surrounding garrigue.

On the palate, it’s beautifully balanced and generous, with red berry fruit at the core and well-judged spice throughout. Silky tannins give a smooth, elegant texture, making this a wine that is both concentrated and effortlessly charming.
