Laroche La Chevalière, Rosé IGP Pays d'Oc, France, 2025

Beautifully pale pink, this wine reveals aromas of freshly crushed strawberries and raspberries. The palate is marked by a crisp acidity and an elegant, juicy finish, resulting in a delicate and fruity style of rosé.

The grapes were harvested at night and kept at low temperatures to preserve aromatics and freshness. Gentle whole-bunch pressing took place to ensure a more delicate and scented rosé. The must was cold settled prior to fermentation, which took place at low temperatures of 12-17°C for 10-12 days. This was followed by a three-month maturation in stainless-steel vats, then a light filtration to ensure that the natural fruit feel and body of the wine were retained.
