On the nose the wine shows bergamot, stone fruits and light orange zest notes. A very elegant, fresh and crisp Assyrtiko with fine acidity, notes of orange blossom, jasmine, ginger, alongside pronounced and long lasting minerality.
Hand-picking of the grapes, followed by meticulous selection at the winery, desteming, crushing and pressing. Settling of the juice followed by spontaneous wild alcoholic fermentation. Ten months ageing on the fine lees with frequent stirring - 60% in stainless steel, 20% in untoasted German oak barrels (1250 litres) and 20% in amphora.
