A fascinating wine, with great flavour, energy and tension, with a bit of tannin – as it’s basically vinified more like a red than a white.
Franco explains that 90% of the blend is “foot stomped to release the juice so it can be in contact with the skins…..Near the completion of ferment, we press straight into old white barriques to finish fermentation”; and 5% of the blend isn’t crushed but left on the skins for a week. As he says “we make it this way to try to get a balance between aroma and tannin ripeness. The stalks from the first treatment adds some fine tannins and obviously you get a lot more tannin from the second treatment”.
