Les Gryphées refers to the fossils of ancient oysters found in the vineyards. A tiny production single vineyard Chardonnay made in a conventional Burgundian style. It has weight, structure, fruit and minerality perfectly in harmony with spiced apple fruit and just a hint of crème fraiche from the one-third aged in new oak. Serious and impressive, this is more than a match for top 1er Cru white Burgundy.
