barrel-fermented and inspiringly full flavoured. Heady nose of orange blossom, honeysuckle and ripe apple. The palate is dry but substantive with long lingering green and stone fruits.
Alcoholic fermentation, then partial malolactic and aging in 400L barrels on fine lees for eleven months with regular stirring. Bottling mid-September.
