The wine shows notes of vibrant red berries, blackberry fruit and liquorice spice, underpinned by elegant, fine-grained tannins and a lingering, fresh finish.
The vines have an average age of 45 years. They lie on a rocky outcrop of calcareous silt soil, which encourages the roots to dig deep to access water and nutrients, giving the finished wines excellent freshness and acidity.
With a strong belief in the transition to biodynamic farming, the team have helped to restore the ecosystem in the vineyards by using highly effective growing techniques, and placing beehives and chickens among the vines.
he grapes are harvested by hand, while sorting is done both before and after destemming. Fermentation is carried out in temperature-controlled concrete vats for two to four weeks at a temperature between 28 and 30°C. The wine is then aged for 18 months in a combination of concrete vats and 20% new French oak.
